Herb butters are easily made – a ball or curl can be added to a bowl of soup, or be spread on freshly baked bread or rolls – or put between the slices in a French bread stick and put in the oven, or used to spread on a cracker with cheese. Use 4oz or 100g butter to 1 teaspoon of chopped herbs. Soften and mash the butter and the herbs and blend together so that the herbs are evenly mixed throughout the butter. Try the following for a delicious change:

·             Parsley

·             Oregano or majoram

·             Mint

·             Sage

·             Rosemary

Herb Cheeses can be made by adding chopped herbs to soured cream, soya cheese, cream cheese or yogurt. Mix the chopped herb into the cheese product and then leave in the refrigerator for a few hours before using to let the flavour spread. Try the following for a nice change:

·             Mint

·             Garlic

·             Caraway seeds

·             Coriander
