Though the weather has been very wet the herb garden is on a sloping site, so hasn’t suffered too much. It doesn’t have much sun in the winter with the sun so low in the sky but as there has been little frost (up to last night that is) there is still a lot of life in the herb garden. The Rosemary is in early flower, and I can cut Sage, Oregano, Parsley and Bay leaves. Take care drying in the microwave.

Parsley is in a large planter and this is its second season so I’ll have to plant new later this year. I have uprooted several stray oregano and marjoram plants that have seeded around the garden whilst clearing the ground before Christmas – originally hybrid golden versions the seeded plants have reverted to the green. I clipped all the leaves off and dried them.

Sage -  I clip a few leaves off when I need to use them fresh, but did dry a little to make the sage and onion stuffing. You need to take care in the microwave as sage can ignite.

I am trying to successively clip down my large Bay tree and have dried a big bag of bay leaves – I use them in cooking but also have other uses.
